Ingredients: Bone Broth Collagen Lemon Chicken Pasta Salad
Pasta Salad
- 1/2 box bowtie pasta (8 oz dry)
- 1 zucchini, grilled + sliced
- 1 red bell pepper, grilled +sliced
- 1 lemon, grilled (halved)
- 1/2 cup cherry tomatoes halved
- 1 English cucumber, chopped
Chicken + Marinade
- 2 chicken breasts
- 1 scoop Vitauthority Chicken Bone Broth Collagen
- 1/2 cup water
- Juice of 1 lemon
- Drizzle red wine vinegar
- 1 tsp Dijon mustard
- Salt + pepper
Dressing
- 1/2 scoop bone broth collagen
- 1/4 cup olive oil
- 2–3 tbsp grilled lemon juice
- 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
Step 1
Marinate the chicken by whisking together the bone broth collagen, water, lemon juice, a drizzle of red wine vinegar, Dijon mustard, salt, and pepper.
Step 2
Add the chicken and let it sit for at least 30 minutes.
Step 3
Meanwhile, cook the bow tie pasta in salted water until al dente, drain, and let it cool slightly.
Step 4
Grill the chicken until fully cooked and sliced, then grill the zucchini, red pepper, and halved lemon until lightly charred.
Step 5
In a small bowl, whisk together the bone broth collagen, grilled lemon juice, Dijon, salt, and pepper, then slowly whisk in the olive oil until emulsified.
Step 6
In a large bowl, combine the pasta, sliced chicken, grilled vegetables, cherry tomatoes, and cucumber, then toss everything with the dressing while the pasta is still slightly warm so it coats evenly.
